A native of Turin in Italy's Piedmont region, Chef Federico has worked in some of Italy's most prestigious kitchens including the Grand Hotel Iles Borromees, a majestic and historic hotel in Stresa renowned for its refined Italian cuisine. More recently he collaborated with Chef Marcello Trentini of Mago Rabin restaurant, and highly respected Chef Alfredo Russo at Dolce Stil Novo.
Building on Rossini's outstanding reputation for excellence, Chef Federico has introduced new and enticing dishes to the menu including bagna carda, an aromatic warm dip from Piedmont, made using anchovies and garlic and served with a selection of fresh vegetables, and torro vitellato, the chef's inspired interpretation of the renowned veal and tuna dish, vitello tonnato. Chef Federico's inspired menu also includes seafood dishes from the south of Italy including se mou e zuppa e panbagnato, and giant scallops with strawberries.
